Ingredients

4 ripe avocadoshalved and pitted
1 cup cherry tomatoeshalved
8 oz fresh mozzarella ballshalved
1/4 cup fresh basil leavesthinly sliced
Balsamic Glaze
1/2 cup balsamic vinegar
1 tbsp honey
1/4 tsp salt
1/4 tsp black pepper
Instructions
1In a small saucepan, combine the balsamic vinegar and honey. Bring to a simmer over medium heat.
2Reduce the heat to low and let the mixture simmer until it thickens to a glaze-like consistency, about 8-10 minutes. Stir occasionally.
3Remove the glaze from heat and let it cool slightly. Add salt and pepper, and stir to combine.
4Meanwhile, prepare the avocados by cutting them in half and removing the pits. Use a spoon to gently scoop out some of the flesh to create a larger cavity for stuffing.
5In a medium bowl, combine the cherry tomatoes, mozzarella balls, and sliced basil.
6Stuff each avocado half with the tomato and mozzarella mixture, pressing gently to fit.
7Drizzle the balsamic glaze over the stuffed avocados.
8Serve immediately, garnished with extra basil leaves if desired.
