Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup fresh parsley finely chopped
  • 1/4 cup fresh mint finely chopped
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 1 tsp salt

Instructions

  1. 1 Combine the rinsed quinoa and water in a medium saucepan. Bring to a boil over medium-high heat.
  2. 2 Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is tender and the water is absorbed.
  3. 3 Remove the cooked quinoa from the heat and let it cool to room temperature.
  4. 4 In a large mixing bowl, combine the cherry tomatoes, cucumber, parsley, and mint.
  5. 5 Add the cooled quinoa to the vegetable mixture and gently toss to combine.
