Ingredients

  • 1 cup couscous
  • 1 cup water boiled
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup kalamata olives sliced
  • 1/2 cup feta cheese crumbled
  • 2 tablespoons lemon juice freshly squeezed
  • 3 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper freshly ground
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon fresh mint chopped

Instructions

  1. 1 Bring 1 cup of water to a boil in a medium saucepan.
  2. 2 Remove the saucepan from heat and stir in the couscous. Cover and let it sit for 5 minutes.
  3. 3 Fluff the couscous with a fork and transfer it to a large mixing bowl to cool slightly.
  4. 4 Add cherry tomatoes, cucumber, red bell pepper, red onion, kalamata olives, and feta cheese to the bowl with the couscous.
  5. 5 In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
  6. 6 Pour the dressing over the couscous and vegetables, and toss gently to combine.
  7. 7 Add chopped parsley and mint, and toss once more to distribute the herbs.
  8. 8 Taste and adjust seasoning if necessary before serving.
