2 cups green papayashredded
1 cup cherry tomatoeshalved

2 tablespoons fish sauce
2 tablespoons lime juicefreshly squeezed

Instructions
1Peel and shred the green papaya using a mandoline or a grater. Place it in a large mixing bowl.
2Add the halved cherry tomatoes, shredded carrots, chopped cilantro, and chopped basil to the bowl with the papaya.
3In a separate small bowl, combine the fish sauce, lime juice, grated palm sugar, minced garlic, and sliced chilies. Stir until the sugar is dissolved.
4Pour the dressing over the papaya mixture and toss well to combine all ingredients.
5Add the roasted peanuts and dried shrimp (if using) to the salad and toss lightly to distribute evenly.
6Transfer the salad to a serving platter and garnish with additional cilantro and basil if desired.
7Serve immediately as a refreshing side dish or appetizer.
