Ingredients

  • 2 pieces boneless, skinless chicken breasts halved and pounded to 1/2 inch thickness
  • 1 cup all-purpose flour sifted
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1/2 cup chicken stock
  • 1/4 cup brined capers rinsed
  • 1/4 cup fresh parsley chopped
  • 1 teaspoon lemon zest
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. 1 Season the chicken breasts with salt and pepper. Dredge them in the flour, shaking off any excess.
  2. 2 In a large skillet over medium-high heat, heat the olive oil. Add the chicken breasts and cook for about 3-4 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. 3 In the same skillet, add the lemon juice, chicken stock, and capers. Bring the mixture to a boil, scraping up any brown bits from the bottom of the pan.
  4. 4 Reduce the heat to low and return the chicken to the skillet. Simmer for about 5 minutes, allowing the chicken to absorb the flavors.
  5. 5 Remove the chicken once more and add the butter to the skillet. Stir in the parsley and lemon zest, and adjust the seasoning with salt and pepper if needed.
  6. 6 Serve the chicken hot, drizzled with the lemon herb sauce and garnished with extra parsley if desired.
