Ingredients
1 cupall-purpose floursifted
1/2 teaspoonbaking powder
1/8 teaspoonsalt
2/3 cupgranulated sugar
2 largeeggsat room temperature
1 teaspoonvanilla extract
1 tablespoonlemon zestfreshly grated
1/2 cupunsalted buttermelted and cooled
Instructions
1Preheat your oven to 375°F (190°C) and grease a madeleine pan with butter or non-stick spray.
2In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
3In a large mixing bowl, beat the eggs and sugar together using an electric mixer on high speed until the mixture is pale and thick, about 5 minutes.
4Add the vanilla extract and lemon zest to the egg mixture and mix until just combined.
5Gently fold the dry ingredients into the egg mixture in three parts, alternating with the melted butter, until just combined. Be careful not to overmix.
6Spoon the batter into the prepared madeleine pan, filling each mold about three-quarters full.
7Bake in the preheated oven for 8-10 minutes, or until the edges are golden brown and the centers spring back when touched.
8Remove the madeleines from the oven and allow them to cool in the pan for 1-2 minutes before transferring them to a wire rack to cool completely.
