Method
- 01In a small bowl, mix the bourbon, maple syrup, Dijon mustard, soy sauce, olive oil, black pepper, and salt to create the glaze.
- 02Place the pork chops in a resealable plastic bag and pour half of the glaze over them. Seal the bag and marinate in the refrigerator for at least 1 hour.
- 03Preheat the oven to 375°F (190°C).
- 04Heat a large ovenproof skillet over medium-high heat. Remove the pork chops from the marinade and sear them in the skillet for 3-4 minutes on each side until browned.
- 05Pour the remaining glaze over the pork chops and transfer the skillet to the oven. Bake for 15-20 minutes until the pork chops are cooked through.
- 06While the pork chops are baking, prepare the slaw by combining the green cabbage, red cabbage, apples, and carrot in a large bowl.
- 07In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper. Pour this dressing over the cabbage mixture and toss to combine.
- 08Remove the pork chops from the oven and let them rest for 5 minutes. Serve with the apple cabbage slaw on the side.
