Ingredients

  • 2 tablespoons olive oil
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 1 tablespoon ginger grated
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon garam masala

  • 1/2 teaspoon chili powder
  • 1 can crushed tomatoes
  • 1 can coconut milk
  • 2 cans chickpeas drained and rinsed
  • 2 tablespoons butter
  • 1 tablespoon lemon juice

  • to taste black pepper freshly ground
  • 1/4 cup fresh cilantro chopped

Instructions

  1. 1 Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. 2 Add minced garlic and grated ginger to the skillet. Cook for another 1-2 minutes until fragrant.
  3. 3 Stir in the ground cumin, coriander, garam masala, turmeric, and chili powder. Cook the spices for 1 minute to release their flavors.
  4. 4 Pour in the crushed tomatoes and coconut milk. Stir well to combine with the spices.
  5. 5 Add the chickpeas to the skillet. Reduce the heat to low and let the curry simmer for 15 minutes, stirring occasionally.
  6. 6 Stir in the butter and lemon juice. Season with salt and freshly ground black pepper to taste.
  7. 7 Continue to simmer the curry for another 5 minutes, allowing the flavors to meld together.
