1/4 cupsun-dried tomatoeschopped
2 tbspfresh basilchopped
1 tbspfresh thymechopped
1 tbspolive oil
1 pinchsalt
1 pinchblack pepperfreshly ground
Instructions
1Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2In a small bowl, combine the goat cheese, sun-dried tomatoes, basil, thyme, olive oil, salt, and black pepper, mixing until well combined.
3Roll out the puff pastry sheet on a lightly floured surface to smooth it out.
4Spread the goat cheese mixture evenly over the entire surface of the puff pastry.
5Starting from one long edge, roll the pastry towards the center, stopping at the middle. Repeat from the opposite side until both rolls meet in the center.
6Use a sharp knife to slice the rolled pastry into 1/2-inch thick slices and place them cut-side up on the prepared baking sheet.
7Bake in the preheated oven for 15-20 minutes or until the palmiers are golden brown and the pastry is cooked through.
8Remove from the oven and let cool slightly on a wire rack before serving warm or at room temperature.
