Ingredients

  • 1 sheet puff pastry thawed
  • 4 oz goat cheese softened
  • 1/4 cup sun-dried tomatoes chopped
  • 2 tbsp fresh basil chopped
  • 1 tbsp fresh thyme chopped
  • 1 tbsp olive oil
  • 1 pinch salt
  • 1 pinch black pepper freshly ground

Instructions

  1. 1 Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. 2 In a small bowl, combine the goat cheese, sun-dried tomatoes, basil, thyme, olive oil, salt, and black pepper, mixing until well combined.
  3. 3 Roll out the puff pastry sheet on a lightly floured surface to smooth it out.
  4. 4 Spread the goat cheese mixture evenly over the entire surface of the puff pastry.
  5. 5 Starting from one long edge, roll the pastry towards the center, stopping at the middle. Repeat from the opposite side until both rolls meet in the center.
  6. 6 Use a sharp knife to slice the rolled pastry into 1/2-inch thick slices and place them cut-side up on the prepared baking sheet.
  7. 7 Bake in the preheated oven for 15-20 minutes or until the palmiers are golden brown and the pastry is cooked through.
  8. 8 Remove from the oven and let cool slightly on a wire rack before serving warm or at room temperature.
