Ingredients

  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 2 cups potatoes peeled and cubed
  • 3 cups cauliflower florets
  • 1 medium onion finely chopped
  • 2 teaspoons ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon salt or to taste
  • 1/4 cup water
  • 2 tablespoons cilantro chopped

Instructions

  1. 1 Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle for 30 seconds until fragrant.
  2. 2 Add the chopped onion and sauté until golden brown, about 5 minutes.
  3. 3 Stir in the ginger-garlic paste and cook for another minute until the raw smell disappears.
  4. 4 Add the turmeric, coriander powder, and red chili powder. Mix well and cook for a minute.
  5. 5 Add the cubed potatoes, cauliflower florets, and salt. Stir to coat the vegetables with the spices.
  6. 6 Pour in the water, cover the pan, and let it simmer on low heat for 15-20 minutes, or until the vegetables are tender.
  7. 7 Uncover, add garam masala, and cook for another 2-3 minutes to let the flavors meld.
  8. 8 Garnish with chopped cilantro and serve hot with rice or Indian bread.
