2 cups whole wheat floursifted
3/4 cup water
1 teaspoon salt
2 tablespoons oil

4 medium potatoesboiled and mashed
1 teaspoon cumin seedstoasted
1 teaspoon red chili powder
1 teaspoon garam masala
1/2 teaspoon amchur (dry mango powder)
2 tablespoons fresh cilantrochopped
1 teaspoon salt
Instructions
1In a large mixing bowl, combine the sifted whole wheat flour and salt. Gradually add water and knead to form a smooth dough. Cover with a damp cloth and let it rest for 20 minutes.
2While the dough rests, prepare the filling by boiling and mashing the potatoes in a separate bowl.
3Add toasted cumin seeds, red chili powder, garam masala, amchur, chopped cilantro, and salt to the mashed potatoes. Mix well until all ingredients are evenly incorporated.
4Divide the dough into equal-sized balls and flatten each ball slightly. Place a portion of the spiced potato mixture in the center of each flattened dough piece.
5Carefully bring the edges of the dough together to seal the filling inside. Flatten the stuffed dough balls gently with your hands.
6Roll out each ball into a round, flat disc using a rolling pin, ensuring the filling does not spill out.
7Heat a pan over medium heat and cook each paratha for 2-3 minutes on each side, applying a small amount of oil until golden brown spots appear.
8Serve hot, ideally with yogurt or pickle on the side.
