Ingredients

  • 1 cup red lentils rinsed
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon chili powder
  • 1 can diced tomatoes 14 oz
  • 2 cups water
  • 1 teaspoon salt or to taste
  • 1/4 cup fresh cilantro chopped

Instructions

  1. 1 Heat the vegetable oil in a large pot over medium heat. Add the cumin seeds and toast them until they start to crackle.
  2. 2 Add the chopped onion, garlic, and ginger. Sauté until the onion is golden brown.
  3. 3 Stir in the turmeric, ground coriander, garam masala, and chili powder. Cook for 1-2 minutes until fragrant.
  4. 4 Add the diced tomatoes and cook for another 3-4 minutes, stirring occasionally.
  5. 5 Add the rinsed red lentils and water. Stir well to combine all the ingredients.
  6. 6 Bring to a boil, then reduce the heat to low and let it simmer uncovered for about 20-25 minutes, or until the lentils are soft and the dhal has thickened.
  7. 7 Season with salt to taste and stir in the chopped cilantro just before serving.
  8. 8 Serve hot with rice or naan bread.
