1 cupred lentilsrinsed

1/4 cupfresh cilantrochopped
Instructions
1Heat the vegetable oil in a large pot over medium heat. Add the cumin seeds and toast them until they start to crackle.
2Add the chopped onion, garlic, and ginger. Sauté until the onion is golden brown.
3Stir in the turmeric, ground coriander, garam masala, and chili powder. Cook for 1-2 minutes until fragrant.
4Add the diced tomatoes and cook for another 3-4 minutes, stirring occasionally.
5Add the rinsed red lentils and water. Stir well to combine all the ingredients.
6Bring to a boil, then reduce the heat to low and let it simmer uncovered for about 20-25 minutes, or until the lentils are soft and the dhal has thickened.
7Season with salt to taste and stir in the chopped cilantro just before serving.
