Ingredients

Main Ingredients

  • 1 cup short-grain rice
  • 4 cups water
  • 1/2 cup sake
  • 1 teaspoon salt
  • 1 tablespoon soy sauce
  • 1/2 cup scallions sliced

Optional Toppings

  • 1 tablespoon sesame seeds toasted
  • 1 teaspoon chili oil

Instructions

  1. 1 Rinse the short-grain rice under cold water until the water runs clear to remove excess starch.
  2. 2 In a medium pot, combine the rinsed rice and water. Bring to a boil over medium-high heat.
  3. 3 Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes, stirring occasionally to prevent sticking.
  4. 4 Add the sake, salt, and soy sauce to the pot. Stir well and continue to cook for another 5-10 minutes until the rice is soft and the porridge has thickened to your liking.
  5. 5 Stir in the sliced scallions and remove the pot from heat. Let it sit covered for a few minutes to allow the flavors to meld.
  6. 6 Serve the porridge in bowls, topped with optional sesame seeds and a drizzle of chili oil for added flavor and heat.
