Ingredients

Main Ingredients

  • 1 pound chicken thighs cut into 1-inch cubes
  • 8 pieces green onions cut into 1-inch pieces
  • 12 pieces bamboo skewers soaked in water for 30 minutes

Yakitori Sauce

  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 1/4 cup sake
  • 2 tablespoons sugar
  • 1 tablespoon ginger grated
  • 1 clove garlic minced

Instructions

  1. 1 In a small saucepan, combine soy sauce, mirin, sake, sugar, grated ginger, and minced garlic. Bring to a boil over medium heat.
  2. 2 Reduce the heat to low and simmer the sauce for 10 minutes until slightly thickened. Remove from heat and let cool.
  3. 3 Thread the chicken pieces and green onion alternately onto the soaked bamboo skewers.
  4. 4 Preheat a grill or broiler to medium-high heat. Lightly oil the grate or broiler pan.
  5. 5 Cook the skewers on the grill or under the broiler for about 5-7 minutes on each side, basting frequently with the yakitori sauce.
  6. 6 Continue to cook until the chicken is cooked through and slightly charred on the edges.
  7. 7 Remove the skewers from the heat and let them rest for a few minutes before serving.
  8. 8 Serve the skewers hot, drizzled with any remaining yakitori sauce.
