Ingredients

  • 2 tablespoons unsalted butter
  • 2 cups leeks sliced and washed
  • 2 cups potatoes peeled and diced
  • 4 cups low-sodium chicken broth
  • 1 cup low-fat milk
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/4 cup chives chopped

Instructions

  1. 1 In a large pot, melt the butter over medium heat.
  2. 2 Add the sliced leeks to the pot and sauté until they are soft and translucent, about 5 minutes.
  3. 3 Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat to a simmer.
  4. 4 Simmer the soup for about 20 minutes, or until the potatoes are tender.
  5. 5 Remove the pot from heat and allow it to cool slightly. Use an immersion blender to puree the soup until smooth.
  6. 6 Stir in the low-fat milk, salt, and white pepper. Return to heat and warm gently, without boiling.
  7. 7 Ladle the soup into bowls and garnish with chopped chives.
  8. 8 Serve the vichyssoise warm, or chill and serve cold for a refreshing dish.
