Ingredients
Grilled Eggplant
2 medium eggplantssliced into 1/2-inch rounds
1/4 cup olive oil
1 teaspoon salt
1/2 teaspoon black pepperfreshly ground
Yogurt Sauce
1 cup Greek yogurt
2 tablespoons lemon juicefreshly squeezed
2 tablespoons fresh mintchopped
1 clove garlicminced
1/4 teaspoon salt
Instructions
1Preheat the grill to medium-high heat.
2Brush the eggplant slices with olive oil on both sides and season with salt and freshly ground black pepper.
3Place the eggplant slices on the grill and cook for 5-7 minutes on each side, or until tender and grill marks appear.
4While the eggplant is grilling, prepare the yogurt sauce by combining Greek yogurt, lemon juice, chopped mint, minced garlic, and salt in a bowl. Mix well.
5Once the eggplant is grilled, remove from the grill and arrange on a serving platter.
6Drizzle the yogurt sauce over the grilled eggplant and garnish with additional chopped mint if desired.
