Ingredients

Zucchini Boats

  • 4 medium zucchini halved lengthwise and scooped
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper freshly ground

Lemon Herb Filling

  • 1 cup cherry tomatoes quartered
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons fresh basil chopped
  • 1 tablespoon lemon juice freshly squeezed
  • 1/2 teaspoon lemon zest grated
  • 1 clove garlic minced

Instructions

  1. 1 Preheat your grill to medium-high heat.
  2. 2 Brush the zucchini halves with olive oil and season with salt and freshly ground black pepper.
  3. 3 Grill the zucchini halves cut-side down for about 5 minutes until they have grill marks and are slightly tender.
