Method
- 01In a large bowl, combine ground lamb, onion, garlic, cumin, coriander, paprika, cayenne, salt, pepper, and parsley. Mix well until all ingredients are evenly incorporated.
- 02Divide the lamb mixture into 8 equal portions. Using your hands, shape each portion into an oval or log shape around a skewer.
- 03Cover the koftas and refrigerate for at least 15 minutes to help them hold their shape.

- 05Preheat a grill or grill pan over medium-high heat. Lightly oil the grill grates.
- 06Grill the koftas for about 3-4 minutes per side, or until cooked through and nicely charred on the outside.
