4 large corn tortillas
1 cup refried beansheated
1/2 cup crumbled queso fresco
1 tbsp olive oil
Salsa Ingredients
3 large ripe tomatoesdiced

Instructions
1Prepare the salsa by combining diced tomatoes, chopped onion, minced jalapeño, chopped cilantro, lime juice, and salt in a bowl. Mix well and set aside.
2Heat the olive oil in a large skillet over medium heat.
3Fry each corn tortilla in the skillet until crispy and golden brown, about 1-2 minutes per side. Remove and set aside.
4In the same skillet, crack the eggs and cook until the whites are set but the yolks are still runny, about 3-4 minutes.
5Spread a layer of heated refried beans on each crispy tortilla.
6Place a fried egg on top of each tortilla with beans.
7Spoon the prepared salsa over the eggs and sprinkle with crumbled queso fresco.
8Serve immediately, garnished with extra cilantro if desired.
