Ingredients

Chicken and Stuffing

  • 4 pieces chicken breasts boneless and skinless
  • 2 cups fresh spinach chopped
  • 1 cup feta cheese crumbled
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. 1 Preheat your oven to 375°F (190°C).
  2. 2 In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the minced garlic until fragrant, about 1 minute.
  3. 3 Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
  4. 4 In a bowl, combine the cooked spinach, crumbled feta cheese, salt, and black pepper. Mix well to create the stuffing.
  5. 5 Lay the chicken breasts flat on a cutting board and, using a sharp knife, carefully cut a pocket into the side of each breast.

  7. 7 Heat another tablespoon of olive oil in an oven-safe skillet over medium-high heat.
  8. 8 Sear the stuffed chicken breasts on both sides until golden brown, about 3-4 minutes per side.
  9. 9 Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
