Chicken and Stuffing
4 pieces chicken breastsboneless and skinless
2 cups fresh spinachchopped
1 cup feta cheesecrumbled
2 cloves garlicminced
1 tablespoon olive oil
1/2 teaspoon black pepper
1/2 teaspoon salt

Instructions
1Preheat your oven to 375°F (190°C).
2In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the minced garlic until fragrant, about 1 minute.
3Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.
4In a bowl, combine the cooked spinach, crumbled feta cheese, salt, and black pepper. Mix well to create the stuffing.
5Lay the chicken breasts flat on a cutting board and, using a sharp knife, carefully cut a pocket into the side of each breast.
6Stuff each chicken breast with the spinach and feta mixture, securing the opening with toothpicks if necessary.
7Heat another tablespoon of olive oil in an oven-safe skillet over medium-high heat.
8Sear the stuffed chicken breasts on both sides until golden brown, about 3-4 minutes per side.
9Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
10Remove from the oven, let the chicken rest for a few minutes, then remove the toothpicks and serve.
