Ingredients

  • 4 pieces chicken breasts boneless and skinless
  • 2 cups fresh spinach chopped
  • 3/4 cup feta cheese crumbled
  • 1/4 cup sundried tomatoes chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper freshly ground

Instructions

  1. 1 Preheat your oven to 375°F (190°C).
  2. 2 In a skillet over medium heat, add olive oil and sauté garlic until fragrant, about 1 minute.
  3. 3 Add chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat.
  4. 4 In a bowl, combine the cooked spinach, crumbled feta, sundried tomatoes, oregano, salt, and black pepper.
  5. 5 Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
