Ingredients
1 1/2 poundschicken breastcut into 1-inch cubes
1/4 cupolive oil
1 tbsplemon zest
3 tbsplemon juicefreshly squeezed
3 clovesgarlicminced
1 tbspdried oregano
1 tspdried thyme
1 tspsalt
1/2 tspblack pepperfreshly ground

Instructions
1In a large bowl, combine olive oil, lemon zest, lemon juice, garlic, oregano, thyme, salt, and black pepper. Whisk until well blended.
2Add the chicken cubes to the marinade and toss until the chicken is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
3If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
4Preheat the grill to medium-high heat.
5Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.
6Place the skewers on the grill and cook for 12-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
7Remove the skewers from the grill and let them rest for a few minutes.
8Garnish with chopped parsley and serve hot with your choice of sides.
