Ingredients

  • 1 1/2 pounds chicken breast cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1 tbsp lemon zest
  • 3 tbsp lemon juice freshly squeezed
  • 3 cloves garlic minced
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper freshly ground
  • 1 tbsp parsley chopped

Instructions

  1. 1 In a large bowl, combine olive oil, lemon zest, lemon juice, garlic, oregano, thyme, salt, and black pepper. Whisk until well blended.
  2. 2 Add the chicken cubes to the marinade and toss until the chicken is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. 3 If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. 4 Preheat the grill to medium-high heat.
  5. 5 Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.
  6. 6 Place the skewers on the grill and cook for 12-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
