Ingredients

  • 1 pound large shrimp peeled and deveined
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 tablespoons fresh basil chopped
  • 2 cloves garlic minced
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper freshly ground
  • 1/4 teaspoon red pepper flakes
  • 8-10 pieces wooden skewers soaked in water

Instructions

  1. 1 In a medium bowl, whisk together olive oil, lemon juice, chopped basil, minced garlic, lemon zest, salt, black pepper, and red pepper flakes.
  2. 2 Add the shrimp to the bowl and toss to coat them evenly in the marinade. Cover and refrigerate for at least 15 minutes.
  3. 3 Preheat the grill to medium-high heat.
  4. 4 Thread the marinated shrimp onto the soaked wooden skewers, piercing through the tail and head of each shrimp.
  5. 5 Place the skewers on the grill and cook for 3-4 minutes per side, or until the shrimp are opaque and cooked through.
