8 ounces spaghetti noodles
1 bunch scallionssliced
1/4 cup roasted peanutschopped
1 tablespoon vegetable oil

Peanut Sauce
1/2 cup creamy peanut butter
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon rice vinegar
1 teaspoon gingergrated
1 clove garlicminced
1 tablespoon lime juicefreshly squeezed
1/4 teaspoon red pepper flakes
1/4 cup water
Instructions
1Cook the spaghetti noodles according to package instructions. Drain and set aside.
2In a medium bowl, combine peanut butter, soy sauce, honey, rice vinegar, ginger, garlic, lime juice, red pepper flakes, and water. Whisk until smooth and well combined.
3In a large pan, heat vegetable oil over medium heat. Add the sliced scallions, reserving a small amount for garnish, and sauté for 1-2 minutes until fragrant.
4Add the cooked noodles to the pan with the scallions. Pour in the peanut sauce and toss everything together until the noodles are evenly coated.
5Remove the pan from heat and transfer the noodles to serving plates.
6Garnish with reserved scallions, chopped roasted peanuts, and toasted sesame seeds. Serve immediately.
