- 01Preheat your oven to 400°F (200°C).
- 02Pierce each potato several times with a fork, then bake directly on the oven rack for 45-50 minutes until tender.
- 03Allow the potatoes to cool slightly, then cut them in half lengthwise and scoop out most of the flesh, leaving about 1/4 inch of potato on the skin.
- 04Brush the insides of the potato skins with olive oil, then sprinkle with salt and pepper.
- 05Place the potato skins on a baking sheet and return to the oven for 10 minutes to crisp up.
- 06Remove the skins from the oven and fill each with cheddar cheese and bacon.
