Method
- 01Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- 02In a small bowl, combine panko breadcrumbs, parsley, dill, lemon zest, salt, and pepper.
- 03Brush the salmon fillets with Dijon mustard, then press the breadcrumb mixture onto the top of each fillet to form a crust.
- 04Drizzle olive oil over the crusted salmon and place them on the prepared baking sheet.
- 05Bake the salmon in the preheated oven for 12-15 minutes, or until the crust is golden and the fish flakes easily with a fork.
- 06While the salmon is baking, prepare the lemon-dill sauce. In a medium bowl, combine Greek yogurt, lemon juice, dill, honey, salt, and pepper. Mix until well combined.
- 07Once the salmon is cooked, remove from the oven and let it rest for a couple of minutes.
- 08Serve the herb-crusted salmon with a generous dollop of lemon-dill sauce on the side.
- 09Garnish with additional fresh dill and lemon wedges if desired.
