Ingredients

Tofu Marinade

  • 1/4 cup soy sauce
  • 1 tablespoon fresh ginger grated
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 2 cloves garlic minced
  • 1 block firm tofu cut into cubes

Stir-Fry Vegetables

  • 1 cup broccoli florets
  • 1 cup bell pepper sliced
  • 1 cup carrots julienned
  • 1/2 cup snap peas
  • 2 tablespoons vegetable oil

Instructions

  1. 1 In a medium bowl, combine soy sauce, grated ginger, sesame oil, rice vinegar, and minced garlic to create the marinade.
  2. 2 Add tofu cubes to the marinade, ensuring they are well-coated. Let them marinate for at least 15 minutes.
  3. 3 Heat vegetable oil in a large pan or wok over medium-high heat.
  4. 4 Add marinated tofu to the pan and cook for 5 minutes, turning occasionally until golden brown on all sides. Remove tofu and set aside.
  5. 5 In the same pan, add broccoli, bell pepper, carrots, and snap peas. Stir-fry for about 5-7 minutes until vegetables are tender-crisp.
  6. 6 Return tofu to the pan and toss with vegetables to combine. Cook for an additional 2-3 minutes to heat through.
  7. 7 Serve the tofu and vegetable stir-fry hot, garnished with sesame seeds or chopped scallions if desired.
