Ingredients

  • 2 cups all-purpose flour sifted
  • 1 cup unsalted butter cold and diced
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 cup whole milk warm
  • 1 packet active dry yeast
  • 1 cup almond flour
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey
  • 1 teaspoon dried lavender crushed

Instructions

  1. 1 In a small bowl, combine warm milk and yeast. Stir gently and allow to sit for 5 minutes until frothy.
  2. 2 In a large bowl, mix sifted flour, granulated sugar, and salt. Add the cold, diced butter and mix until the mixture resembles coarse crumbs.
  3. 3 Pour the milk and yeast mixture into the flour mixture. Stir until a dough begins to form. Turn the dough onto a floured surface and knead gently until smooth. Wrap in plastic wrap and chill for 30 minutes.
  4. 4 For the almond filling, combine almond flour, powdered sugar, and vanilla extract. Mix until smooth and set aside.
  5. 5 Roll out the chilled dough into a large rectangle. Spread a thin layer of the almond filling over the surface, leaving a border around the edges.
  6. 6 Fold the dough into thirds, like a letter. Roll out again into a rectangle and fold once more. Chill the dough for another 20 minutes.
  7. 7 Preheat the oven to 400°F (200°C). Cut the dough into triangles and roll each into a croissant shape. Place on a parchment-lined baking sheet.
  8. 8 Bake for 15-20 minutes or until golden brown. While croissants bake, combine honey and crushed lavender in a small saucepan over low heat. Stir until infused.
  9. 9 Remove croissants from the oven and brush generously with the honey-lavender glaze. Allow to cool slightly before serving.
