Ingredients

  • 1 cup red lentils rinsed
  • 1 tablespoon olive oil
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 1 inch ginger grated
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon red chili powder
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 tablespoons lime juice freshly squeezed
  • 1/4 cup fresh cilantro chopped

  • to taste black pepper freshly ground

Instructions

  1. 1 Heat olive oil in a large pot over medium heat.
  2. 2 Add the chopped onion and sauté until translucent, about 5 minutes.
  3. 3 Stir in the garlic, ginger, turmeric, cumin, coriander, cinnamon, and chili powder. Cook for 1-2 minutes until fragrant.
  4. 4 Add the diced tomatoes with their juice and cook for another 3 minutes.
  5. 5 Pour in the vegetable broth and add the rinsed lentils. Bring to a boil.
  6. 6 Reduce the heat to low, cover the pot, and let the soup simmer for about 30 minutes, or until the lentils are tender.
  7. 7 Stir in the coconut milk and lime juice, and season with salt and pepper to taste.
  8. 8 Simmer for an additional 5 minutes to blend the flavors.
  9. 9 Remove from heat and stir in the chopped cilantro.
  10. 10 Serve hot, garnished with additional cilantro if desired.
