Ingredients

  • 3 cups cooked rice preferably cold
  • 1 cup kimchi chopped
  • 4 slices bacon cut into small pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons gochujang
  • 2 tablespoons vegetable oil
  • 2 eggs fried
  • 2 stalks green onions sliced
  • 1 teaspoon sesame seeds toasted

Instructions

  1. 1 Heat a large pan over medium heat and add the bacon pieces. Cook until crispy, about 5-7 minutes.
  2. 2 Remove the bacon from the pan and drain on paper towels, leaving the bacon fat in the pan.
  3. 3 Add the vegetable oil to the pan and increase the heat to medium-high. Add the chopped kimchi and stir-fry for 2-3 minutes until fragrant.
  4. 4 Add the cold rice to the pan, breaking up any clumps with a spatula. Stir-fry for 3-4 minutes until the rice is heated through.
  5. 5 In a small bowl, mix the soy sauce, sesame oil, and gochujang. Pour this mixture over the rice and stir well to combine.
  6. 6 Return the crispy bacon to the pan and mix well with the rice and kimchi.
  7. 7 Divide the fried rice among plates and top each serving with a fried egg.
  8. 8 Garnish with sliced green onions and toasted sesame seeds before serving.
