Ingredients
Samosa Ingredients
2 cups floursifted
1/4 cup vegetable oil
1/2 teaspoon salt
1/2 cup waterwarm
2 cups potatoesboiled and diced
1 cup green peasboiled
1 teaspoon cumin seedstoasted
1/2 teaspoon red chili powder
1 teaspoon garam masala
2 tablespoons fresh corianderchopped

1 cup yogurtwhisked
1/2 cup tamarind chutney
1/2 cup green chutney
1/2 cup sev
1 teaspoon chili powder
1 tablespoon fresh corianderchopped
Instructions
1In a large bowl, mix sifted flour and salt. Add vegetable oil and rub it into the flour until the mixture resembles breadcrumbs.
2Gradually add warm water to the flour mixture and knead into a firm dough. Cover and set aside for 20 minutes.
3In a pan, heat a little oil and add cumin seeds. Once they splutter, add boiled potatoes, green peas, red chili powder, and garam masala. Cook for 5 minutes, then add chopped coriander.
4Divide the dough into small balls and roll each into a circle. Cut the circle in half to form two semi-circles.
5Shape each semi-circle into a cone and fill with the potato mixture. Seal the edges with a little water.
6Heat oil in a deep fryer and fry the samosas until golden brown. Drain on paper towels.
7Place the fried samosas on a plate and break them slightly. Top with whisked yogurt, tamarind chutney, and green chutney.
8Sprinkle sev, chili powder, and chopped coriander over the top. Serve immediately.
