Ingredients

Samosa Ingredients

  • 2 cups flour sifted
  • 1/4 cup vegetable oil
  • 1/2 teaspoon salt
  • 1/2 cup water warm
  • 2 cups potatoes boiled and diced
  • 1 cup green peas boiled
  • 1 teaspoon cumin seeds toasted
  • 1/2 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 2 tablespoons fresh coriander chopped

Toppings

  • 1 cup yogurt whisked
  • 1/2 cup tamarind chutney
  • 1/2 cup green chutney
  • 1/2 cup sev
  • 1 teaspoon chili powder
  • 1 tablespoon fresh coriander chopped

Instructions

  1. 1 In a large bowl, mix sifted flour and salt. Add vegetable oil and rub it into the flour until the mixture resembles breadcrumbs.
  2. 2 Gradually add warm water to the flour mixture and knead into a firm dough. Cover and set aside for 20 minutes.
  3. 3 In a pan, heat a little oil and add cumin seeds. Once they splutter, add boiled potatoes, green peas, red chili powder, and garam masala. Cook for 5 minutes, then add chopped coriander.
  4. 4 Divide the dough into small balls and roll each into a circle. Cut the circle in half to form two semi-circles.
  5. 5 Shape each semi-circle into a cone and fill with the potato mixture. Seal the edges with a little water.
  6. 6 Heat oil in a deep fryer and fry the samosas until golden brown. Drain on paper towels.
  7. 7 Place the fried samosas on a plate and break them slightly. Top with whisked yogurt, tamarind chutney, and green chutney.
  8. 8 Sprinkle sev, chili powder, and chopped coriander over the top. Serve immediately.
