Ingredients

  • 3 cups cooked rice preferably day-old
  • 1 cup kimchi chopped
  • 2 tablespoons kimchi juice
  • 1 tablespoon gochujang
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 4 pieces green onions sliced
  • 1 cup mixed vegetables diced
  • 2 large eggs beaten

Instructions

  1. 1 Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. 2 Add the minced garlic and sliced green onions, sauté until fragrant, about 1 minute.
  3. 3 Add the chopped kimchi and cook for another 2 minutes, stirring frequently.
  4. 4 Push the kimchi to one side of the skillet and add the remaining 1 tablespoon of vegetable oil.
  5. 5 Pour in the beaten eggs and scramble until just set, then mix with the kimchi.
  6. 6 Add the cooked rice to the skillet, breaking up any clumps with a spatula.
  7. 7 Stir in the gochujang, soy sauce, and kimchi juice, mixing well to combine all ingredients.
  8. 8 Add the diced mixed vegetables and cook for an additional 3-4 minutes, until everything is heated through.
  9. 9 Drizzle with sesame oil and give it a final stir, ensuring even distribution of flavors.
  10. 10 Serve hot, garnished with extra sliced green onions or sesame seeds if desired.
