Ingredients

  • 3 cups cooked white rice preferably chilled
  • 1 cup kimchi chopped
  • 2 tablespoons kimchi juice
  • 1 tablespoon gochujang
  • 1 tablespoon soy sauce
  • 2 teaspoons sesame oil
  • 2 tablespoons vegetable oil
  • 1 teaspoon sugar
  • 2 stalks green onions sliced
  • 4 pieces eggs
  • 1 tablespoon sesame seeds toasted

Instructions

  1. 1 Heat 1 tablespoon of vegetable oil in a large frying pan or wok over medium-high heat.
  2. 2 Add the chopped kimchi and stir-fry for about 2-3 minutes until fragrant.
  3. 3 Add the kimchi juice, gochujang, soy sauce, sesame oil, and sugar to the pan. Stir well to combine.
  4. 4 Add the chilled rice to the pan and stir-fry, mixing thoroughly to ensure the rice is well coated with the sauce.
  5. 5 Stir in the sliced green onions and cook for another 2-3 minutes until everything is heated through.
  6. 6 In a separate frying pan, heat the remaining tablespoon of vegetable oil over medium heat.
  7. 7 Crack the eggs into the pan and fry until the whites are set but the yolks are still runny, about 2-3 minutes.
  8. 8 Serve the kimchi fried rice in bowls, topped with a fried egg and a sprinkle of toasted sesame seeds.
