Ingredients

  • 1 cup red lentils rinsed
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 2 cups mixed vegetables chopped
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 5 cups vegetable broth
  • 1 teaspoon salt or to taste
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh cilantro chopped

Instructions

  1. 1 Rinse the red lentils under cold water until the water runs clear. Set aside.
  2. 2 In a large pot, heat the olive oil over medium heat. Add the cumin seeds and sauté until they start to sizzle.
  3. 3 Add the chopped onion, minced garlic, and grated ginger to the pot. Cook until the onion becomes translucent.
  4. 4 Stir in the turmeric powder and garam masala, allowing the spices to release their aroma.
  5. 5 Add the rinsed lentils, mixed vegetables, and vegetable broth to the pot. Bring to a boil.
