- 01Preheat the oven to 400°F (200°C).

- 05In a large bowl, combine cherry tomatoes, cucumber, spinach, and red onion.
- 06Once the quinoa is ready, add lemon juice, zest, parsley, mint, and remaining salt. Mix thoroughly.
- 07To assemble the bowls, divide the quinoa among four bowls, top with the vegetable mixture, then add the roasted chickpeas.
- 08Sprinkle each bowl with crumbled feta and sunflower seeds before serving.
