Ingredients

Falafel Ingredients

  • 1 cup dried chickpeas soaked overnight
  • 1 small onion chopped

Tzatziki Sauce Ingredients

  • 1 cup Greek yogurt
  • 1/2 cup cucumber grated and drained
  • 1 tablespoon lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1 tablespoon fresh dill chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. 1 Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. 2 Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, onion, parsley, cilantro, garlic, cumin, coriander, salt, and pepper. Pulse until the mixture is coarse but holds together.
  3. 3 Add baking soda and olive oil to the mixture and pulse a few more times until well combined.
  4. 4 Form the mixture into small balls or patties, about 1-2 inches in diameter, and place them on the prepared baking sheet.
  5. 5 Bake in the preheated oven for 20-25 minutes, turning halfway through, until golden brown and crispy.
