Ingredients

Crust

  • 2 cups all-purpose flour sifted
  • 1 teaspoon salt
  • 1 cup unsalted butter cold and diced
  • 1/4 cup ice water

Filling

  • 4 medium heirloom tomatoes sliced
  • 8 ounces goat cheese crumbled
  • 1/4 cup fresh basil leaves torn
  • 1 tablespoon olive oil
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon sea salt

Instructions

  1. 1 Preheat the oven to 400°F (200°C).
  2. 2 In a large mixing bowl, combine sifted flour and salt. Add cold, diced butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  3. 3 Slowly add ice water, one tablespoon at a time, mixing gently until the dough starts to come together. Form the dough into a disc, wrap in plastic wrap, and refrigerate for 15 minutes.
  4. 4 Roll out the chilled dough on a lightly floured surface to fit a 9-inch tart pan. Transfer the dough to the pan, pressing it into the edges, and trim any excess.
  5. 5 Prick the base of the crust with a fork and pre-bake in the oven for 10 minutes until lightly golden. Remove and set aside.
  6. 6 Arrange sliced heirloom tomatoes over the pre-baked crust. Sprinkle crumbled goat cheese and torn basil leaves on top.
  7. 7 Drizzle olive oil over the tart filling, and season with freshly ground black pepper and sea salt.
  8. 8 Bake the tart in the oven for 25-30 minutes, or until the tomatoes are roasted and the cheese is slightly golden.
  9. 9 Remove from the oven and allow to cool slightly before serving.
