Ingredients

  • 2 cups cooked jasmine rice preferably day-old
  • 1 cup fresh pineapple chunks diced
  • 1 cup mixed vegetables frozen or fresh
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 teaspoon curry powder
  • 1 pinch white pepper
  • 2 whole eggs beaten
  • 2 tablespoons green onions chopped
  • 1/4 cup cashews toasted

Instructions

  1. 1 Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
  2. 2 Add the minced garlic and sauté until fragrant, about 30 seconds.
  3. 3 Push the garlic to the side and add the beaten eggs. Stir until they are scrambled and fully cooked, then mix them with the garlic.
  4. 4 Add the remaining tablespoon of oil, followed by the mixed vegetables, and stir-fry for 2-3 minutes.
  5. 5 Add the diced pineapple and cook for another 2 minutes until the pineapple is slightly caramelized.

  7. 7 Add the day-old rice to the pan, breaking up any clumps with a spatula.
  8. 8 Pour in the soy sauce and fish sauce, and stir-fry for 3-4 minutes until everything is well mixed and heated through.
