Garlic Yogurt Dip
1 cup Greek yogurt
1 clove garlicminced
1 tablespoon lemon juicefreshly squeezed
1 tablespoon fresh dillchopped
1/4 teaspoon salt
1/4 teaspoon black pepperfreshly ground
Instructions
1In a large bowl, combine olive oil, lemon juice, lemon zest, oregano, thyme, minced garlic, salt, and pepper.
2Add the chicken cubes to the marinade and toss to coat well. Cover and let marinate in the refrigerator for at least 30 minutes.
3While the chicken is marinating, prepare the garlic yogurt dip. In a small bowl, mix together Greek yogurt, minced garlic, lemon juice, dill, salt, and pepper. Refrigerate until ready to serve.
4Preheat the grill to medium-high heat. Thread the marinated chicken cubes onto the soaked wooden skewers.
5Grill the chicken skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and golden brown.
6Remove the skewers from the grill and let them rest for a few minutes before serving.
