Ingredients

  • 2 tablespoons vegetable oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 2 cups canned tomatoes crushed
  • 2 cans chickpeas drained and rinsed
  • 1 cup water
  • 1 teaspoon salt or to taste
  • 1/4 cup cilantro chopped

Instructions

  1. 1 Heat the vegetable oil in a large pan over medium heat.
  2. 2 Add the cumin seeds and let them sizzle for a few seconds until aromatic.
  3. 3 Add the chopped onion and sauté until golden brown, about 5-7 minutes.
  4. 4 Stir in the minced garlic and grated ginger, cooking for another minute.
  5. 5 Add the ground coriander, garam masala, turmeric, and red chili powder. Stir to combine and cook for 1 minute.
  6. 6 Pour in the crushed tomatoes and cook for 5 minutes, stirring occasionally.
  7. 7 Add the chickpeas, water, and salt. Stir well and bring to a boil.
  8. 8 Reduce heat to low, cover, and let simmer for 15-20 minutes, allowing the flavors to meld.
  9. 9 Remove the lid and cook for another 5 minutes to thicken the sauce, if desired.
  10. 10 Garnish with chopped cilantro before serving.
