Ingredients

Bhajis

  • 2 cups chickpea flour sifted
  • 3 large onions thinly sliced
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds crushed
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili powder
  • 1 teaspoon salt
  • 1/4 cup water
  • 2 cups vegetable oil for frying

Mint Raita

  • 1 cup plain yogurt
  • 1/4 cup fresh mint leaves finely chopped
  • 1 tablespoon cucumber grated
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon salt

Instructions

  1. 1 In a large bowl, combine chickpea flour, cumin seeds, crushed coriander seeds, turmeric powder, chili powder, and salt.
  2. 2 Gradually add water to the dry ingredients, whisking to form a smooth batter.
  3. 3 Add the thinly sliced onions to the batter and mix well to coat them evenly.
  4. 4 Heat vegetable oil in a deep frying pan over medium heat.
  5. 5 Drop spoonfuls of the onion batter into the hot oil, frying them in batches until golden and crisp, about 4-5 minutes per batch.
  6. 6 Remove the bhajis with a slotted spoon and drain on paper towels.
  7. 7 For the mint raita, combine plain yogurt, chopped mint leaves, grated cucumber, cumin powder, and salt in a bowl. Mix well.
