Ingredients

Chicken Marinade

  • 4 pieces chicken breasts boneless, skinless

Couscous Salad

  • 1/4 cup feta cheese crumbled
  • 2 tbsp parsley chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice freshly squeezed

Instructions

  1. 1 In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper for the marinade.
  2. 2 Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes.
  3. 3 Preheat your grill to medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side until fully cooked.
  4. 4 In a saucepan, bring water to a boil. Add couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
