Ingredients
Crust Ingredients
1 1/4 cups all-purpose floursifted
1/2 teaspoon salt
1/2 cup unsalted buttercold, diced
3-4 tablespoons ice water
Filling Ingredients
1 tablespoon olive oil
1 cup onionchopped

5 cups fresh spinachroughly chopped
4 large eggs
1 cup whole milk
1/2 teaspoon salt
1/4 teaspoon black pepperfreshly ground

Instructions
1Preheat the oven to 375°F (190°C).
2In a bowl, combine flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until dough forms.
3Roll out the dough on a lightly floured surface to fit a 9-inch pie pan. Transfer to the pie pan and trim the edges. Prick the bottom with a fork.
4Bake the crust in the preheated oven for 8-10 minutes until lightly golden. Remove and set aside.
5In a skillet over medium heat, heat olive oil. Add chopped onion and minced garlic, sauté until onion is translucent. Add spinach and cook until wilted.
6In a bowl, whisk together eggs, milk, salt, pepper, and oregano. Stir in the cooked spinach mixture and crumbled feta cheese.
7Pour the filling into the pre-baked crust. Spread evenly with a spatula.
8Bake in the preheated oven for 35-40 minutes, or until the filling is set and the top is golden brown.
9Allow the quiche to cool for a few minutes before slicing and serving.
