Ingredients

Instructions

  1. 1 Preheat your oven to 375°F (190°C).
  2. 2 In a large mixing bowl, whisk together the eggs and whole milk until well combined. Season with sea salt and freshly ground black pepper.
  3. 3 Heat the olive oil in a large ovenproof skillet over medium heat. Add the sliced heirloom tomatoes in a single layer and cook for 2-3 minutes until they start to soften.
  4. 4 Pour the egg mixture over the tomatoes in the skillet. Gently stir the mixture with a spatula to distribute the tomatoes evenly.
  5. 5 Sprinkle the crumbled goat cheese and chopped basil evenly over the top of the egg mixture.
  6. 6 Transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the frittata is puffed and set in the center.
