Ingredients
8 largeeggs
1/4 cupwhole milk
1 cupheirloom tomatoessliced
1 cupfresh basil leaveschopped
1/2 cupgoat cheesecrumbled
1 tablespoonolive oil
1 teaspoonsea salt
1/2 teaspoonblack pepperfreshly ground
Instructions
1Preheat your oven to 375°F (190°C).
2In a large mixing bowl, whisk together the eggs and whole milk until well combined. Season with sea salt and freshly ground black pepper.
3Heat the olive oil in a large ovenproof skillet over medium heat. Add the sliced heirloom tomatoes in a single layer and cook for 2-3 minutes until they start to soften.
4Pour the egg mixture over the tomatoes in the skillet. Gently stir the mixture with a spatula to distribute the tomatoes evenly.
5Sprinkle the crumbled goat cheese and chopped basil evenly over the top of the egg mixture.
6Transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the frittata is puffed and set in the center.
7Remove from the oven and allow to cool slightly before slicing into wedges. Serve warm or at room temperature.
