Ingredients
3 cupsrolled oats
1 cupraw almondschopped
1 cupraw cashewschopped
1/2 cupcoconut flakes
1/2 cuphoney
1/4 cupcoconut oilmelted
2 teaspoonsvanilla extract
1 teaspoonground cinnamon
1 teaspoonground cardamom
1/2 teaspoonground ginger
1/2 teaspoonground cloves
1/2 teaspoonground black pepper
1/2 teaspoonsalt
Instructions
1Preheat your oven to 325°F (160°C). Line a large baking sheet with parchment paper.
2In a large mixing bowl, combine the rolled oats, chopped almonds, chopped cashews, and coconut flakes.
3In a small saucepan over low heat, combine the honey and melted coconut oil. Stir until well combined and heated through.
4Remove the honey and coconut oil mixture from heat and stir in the vanilla extract, ground cinnamon, ground cardamom, ground ginger, ground cloves, ground black pepper, and salt.
5Pour the spiced honey mixture over the dry ingredients in the mixing bowl. Stir until all the ingredients are well coated.
6Spread the granola mixture evenly onto the prepared baking sheet.
7Bake in the preheated oven for 25-30 minutes, stirring halfway through, until the granola is golden brown and fragrant.
8Remove from the oven and let the granola cool completely on the baking sheet. It will become crisp as it cools.
9Once cooled, transfer the granola to an airtight container for storage.
