Ingredients

Hummus Ingredients

  • 2 cups cooked chickpeas drained and rinsed
  • 1 cup roasted red peppers chopped
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Pita Chips Ingredients

  • 4 pieces whole wheat pita bread cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt

Instructions

  1. 1 Preheat your oven to 375°F (190°C).
  2. 2 Place the pita wedges on a baking sheet. Drizzle with olive oil, sprinkle with dried oregano and salt, and toss to coat evenly.
  3. 3 Bake the pita wedges for 12-15 minutes or until golden and crispy. Remove from oven and let them cool.
  4. 4 In a food processor, combine the chickpeas, roasted red peppers, tahini, olive oil, lemon juice, garlic, cumin, smoked paprika, salt, and black pepper.
  5. 5 Process the mixture until smooth, scraping down the sides as needed. Add a tablespoon of water if the hummus is too thick and process again.
  6. 6 Taste and adjust seasonings if necessary. Transfer the hummus to a serving bowl.
  7. 7 Serve the hummus with the cooled pita chips on the side for dipping.
